- 2nd Course ‒ Caribbean Conch Cakes Golden conch cakes with passionfruit, dragon fruit aïoli, and organic microgreen salad. Rum Pairing: Golden Rum Punch ‒ pineapple, orange, nutmeg, island spice.
- 3rd Course ‒ Rum Glazed Mahi-Mahi Fresh Florida mahi-mahi glazed with island rum. Served with kiwi‒starfruit chutney and boniato mango purée. Rum Pairing: Aged Rum Old Fashioned ‒ dark rum, orange bitters, demerara sugar.
