A tropical tasting menu pairing Florida Keys cuisine with the fruit wines of Schnebly Redland’s Winery from Miami, Florida, bringing together the flavors of South Florida and the Florida Keys. 

  1. Welcome Course 

Key West Conch & Mango Ceviche – fresh conch, mango, lime, cilantro, avocado, crispy plantain chips Wine Pairing: Lychee Fruit Wine – floral and aromatic with tropical notes. 

  1. First Course 

Grilled Pineapple & Smoked Cheese Salad – grilled pineapple, smoked cheese, heirloom tomatoes, basil, citrus olive oil 

Wine Pairing: Passion Fruit Wine – bright tropical acidity balancing the smoked cheese. 

  1. Seafood Course 

Pan-Seared Fisherman’s Catch – local daily catch, guava beurre blanc, coconut rice, grilled island vegetables 

Wine Pairing: Guava Wine – sweet tropical notes complement fresh seafood. 

  1. Land Course 

Mojo-Glazed Wild Boar – sweet plantain mash, charred pineapple salsa, citrus mojo reduction Wine Pairing: Mango Wine – smooth tropical sweetness complements the rich boar. 

  1. Dessert 

Key Lime Coconut Tres Leches Cake – toasted coconut crumble, passionfruit drizzle Wine Pairing: Sweet Avocado Wine – creamy tropical sweetness with citrus dessert.
