A refined tasting menu celebrating South Florida flavors and Florida Keys seafood, paired with the deep caramel, vanilla, and oak notes of premium bourbons. This dinner highlights fresh coastal ingredients, tropical produce, and bold grilling techniques inspired by Miami and the Florida Keys. 

  1. Welcome Course 

Florida Stone Crab & Citrus Slaw – stone crab claws, shaved fennel, citrus slaw, mustard dipping sauce 

Bourbon Pairing: Small Batch Kentucky Bourbon – caramel and vanilla complement the sweetness of the crab. 

  1. First Course 

South Florida Avocado Salad – avocado, heirloom tomato, cucumber, shaved radish, citrus vinaigrette, micro greens 

Bourbon Pairing: Wheated Bourbon – honey and vanilla balance the citrus and creamy avocado. 

  1. Seafood Course 

Pan-Seared Hogfish – Florida Keys hogfish, roasted corn relish, lime butter sauce, island vegetables Bourbon Pairing: High Rye Bourbon – spice contrasts with the delicate sweetness of the hogfish. 

  1. Land Course 

Grilled Ribeye Steak – roasted fingerling potatoes, grilled asparagus, smoked pepper sauce Bourbon Pairing: Single Barrel Bourbon – bold oak and caramel complement the ribeye.
